Cat & the Fiddle is marking Singapore's 61st birthday with two limited-edition cheesecakes inspired by familiar local desserts and childhood memories.

Drawing on flavours that generations of Singaporeans have grown up with, the homegrown cheesecake brand has introduced the new Ice Kacang Cheesecake and Raspberry Ripple Cheesecake as part of its National Day Collection.

Ice Kacang Cheesecake Reimagines a Local Favourite

Inspired by the colourful bowl of ice kacang enjoyed on warm afternoons, the Ice Kacang Cheesecake gives the classic dessert a creamy cheesecake makeover.

The cake features layers of rich red bean gula melaka cheese mousse, pandan jelly cubes and sweet corn jelly, with a delicate rose-infused sponge in the centre. It is finished with a smooth red bean topping and piped red and white chantilly cream, giving it a festive appearance that reflects the National Day theme.

For the best texture, Cat & the Fiddle recommends enjoying the cheesecake straight from the freezer, where it delivers a chilled, velvety bite. The Ice Kacang Cheesecake is priced at $48.90 for a whole cake or $6.90 per slice.

Raspberry Ripple Cheesecake Pays Tribute to Singapore's Ice Cream Uncles

The second National Day creation takes inspiration from another familiar sight across Singapore: the iconic ice cream uncles who have been serving affordable frozen treats for decades. 

The Raspberry Ripple Cheesecake combines creamy New York cheese mousse with vibrant raspberry jam and raspberry cheese mousse. A soft vanilla sponge provides a light contrast, while chantilly cream and berry crumbles complete the dessert with a colourful finish.

Available at $52.90 for a whole cake and $6.90 per slice, it offers a modern interpretation of a nostalgic favourite that many Singaporeans will recognise.
